Rosemary | Vlavour™ | Rosmarinus officinalis is a Vacuum Distillate flavour extraction from fresh Australian Grown Rosemary Rosmarinus officinalis L. Rosemary is a perennial shrub from the Mediterranean region, belonging to the Lamiaceae botanical family. It grows in southern Europe, North Africa and Southwest Asia. The plant can reach 2 m in height and develops best in a hot temperate climate with a long exposure to the sun (photoperiod), but cannot survive harsh winters. It is also cultivated frequently in South America, Europe, and Asia, the leaves being used as a spice.
The composition of rosemary oil is from 95 to 98 wt% of monoterpenes and derivatives and 2–5 wt% of sesquiterpenes. Constituents such as α-pinene, limonene, 1,8-cineole, camphor, borneol and verbenone are also present.
A popular culinary herb with a robust flavour reminiscent of pine, mint, camphor and citrus. Rosemary can be used both fresh and dried, though the flavours are somewhat different. Fresh rosemary has a more potent, pine-like flavour, while dried rosemary is more subdued but concentrated. Rosemary has been widely used as a garnish in classic cocktails like a Gin & Tonic. Rosemary has also been used by innovative craft brewers and distillers in their beers and spirits.

Usage Guidance:
